My dear friend Lindsay’s parents have a place outside San Diego in Carlsbad, Calif. I’ve been invited numerous times and Memorial Day Weekend of 2011 was the date we finally settled on. I was so excited as I’d heard what great weather San Diego has and also Lindsay’s parents’ houses are in a well-known resort and spa called La Costa, which was even more spectacular than I could have imagined.
Where to Stay:
La Costa Spa & Resort - This is the resort area where Lindsay’s parents’ houses are located. It’s fabulous. The compound includes houses, condos and a hotel for visitors. Highlights of the resort include:
- La Costa Spa includes: Spa treatments, indoor/outdoor hot tubs, sauna, steam room, outdoor hot water rainfall treatment, Spa cafe with delicious/healthy options (for Spa guests only)
- La Chopra Yoga Center (one of the most famous Yoga instructor’s)
- Gym and Activity Center with various class offerings daily
- Golf Course
- Starbucks Cafe
- Various Restaurants & Fine Dining
- Various Pools, Hot Tubs and Children Pools
A closer look at the Spa:
Casa Feinberg - I was lucky to be hosted by Lindsay’s family, who own two very large places which are conveniently connected. There’s an adult house and a kid’s house, pretty great!
Where to Eat:
Juanitas Taco Shop - Lindsay took me to Lindsay’s for lunch our first day in SD. I have to say this felt and tasted like the most authentic Mexican food I’d had (outside of Mexico that is). The Tacos had amazing mix ins including Cilantro, some Pico de Gaillo and delicious assorted cheeses. I told Lindsay we must come back for lunch another time during the trip as it was that delicious. 3696 Ocean View Blvd., San Diego, CA,92113.
Rudy’s (Mexican Cuisine) - This was a spot we ordered in for a party of 10 people. The food was tasty and according to the local Texans the Mexican was authentic. I enjoyed a beef Taco, some rice as well as all their fresh mix-ins for the tacos. This was definitely good Mexican food but not my #1 which will be hard to beat. 7662 El Camino Real # 102. The Fruit Stand - Another great local secret is The Fruit Stand. They have the BEST Pico de Gallo I’ve ever had and also some amazingly fresh guacamole.
